Try Stir fry!
I love stir frying. It is super easy, quick and healthful. Stir frying is simply a cooking technique like baking or sauteing. It is the act of cooking over a high heat stirring continuously. Forget about the traditional Asian ingredients, almost anything can be stir fried. I use a basic combination of 3 part veggies to one part protein. It can be served straight up or over rice, pasta or any other grain.
Italian Stir fry
1 bunch of basil
1/2 c broccoli, cut into bite size pieces
1/2 c zucchini, cut into bite size pieces
1/2 c bell pepper, cut into bite size pieces
1/2 c sweet/spicy italian sausage, cut into bite size pieces
1/2 c tomato sauce
1-2 cloves of garlic, minced
1 lb pasta or rice
olive oil
salt/pepper to taste
parmesan cheese
Heat up wok with 2 TBSP of olive oil on high heat. Add sausage and cook for about 3-5 min stirring constantly and remove from wok. Add broccoli and bell pepper cook for a minute then add zucchini, garlic and salt/pepper to taste cook for another 3-6 minutes until desired tenderness. Add sausage cooked sausage, basil and tomato sauce cook for another minute. Serve over pasta or rice with parmesan cheese.

_____________Southwestern Stir Fry
1 bunch of cilantro
1/2 c black beans
1/2 c bell pepper, cut into bite size pieces
1/2 c onion, cut into bite size pieces
1/2 c corn
1/2 salsa
1 jalapeno, minced
1 clove garlic, minced
1 tsp cumin
2 c cooked rice
1/2 c cheddar cheese
olive oil
salt/pepper
Heat up wok with 2 TBSP of olive oil on high heat. Add bell peppers, onion and cook for one minute. Add corn, black beans, cumin, jalapeno, garlic and salt/pepper to taste cook for another 5 minutes. Turn of heat, add salsa and cilantro. Serve over rice with cheddar cheese.

Kale Chips
A super easy and healthful snack.
1 bunch of kale, washed and dried
salt/pepper to taste
extra virgin olive oil
Pre-heat the oven to 350. Trim the kale and place on sheet pan in a single layer. drizzle with olive oil, salt and pepper bake for 15-30 min till dry and crispy. serve immediately.
